    Monosaccharides are single saccharide units which cannot be hydrolysed into still smaller carbohydrates. The monosaccharides have free aldehyde or ketone group which can reduce \[C{{u}^{2+}}\] to \[C{{u}^{+}}\]. Hence, these are called reducing sugars e.g.. Glucose, maltose, lactose. Sucrose is most abundant in plants. It consists of 1-D glucose and 1, D fructose units jointed by a 1 -2glycosidic linkage. Due to absence of aldehyde group at 1-C atom the sucrose is non-reducing sugar. Starch is a polymer of D-glucopyranose units linked by \[\alpha -\] 1, 4 glycosidic linkage. It consists of a mixture of amylose and amylopectin in 1 : 4 ratio. Amylose is consisting of about 200-500 glucose units while amylopectin is branched and consisting of over 1000 glucose units.
