A milkman adds a very small amount of baking soda to fresh milk. (a) Why does he shift the pH of the fresh milk from 6 to slightly alkaline ? (b) Why does this milk take a long time to set as curd?

    Answer:

    (a) The milkman adds baking soda to milk so that the milk becomes slightly alkaline. Thus, milk will not be converted to acidic curd readily (b) This will take a longer time to set to curd because it is alkaline and takes longer time for It    bacteria to make it acidic.
