                                     Starch is a homopolysaccharides, which is a polymer of \[\alpha \]- glucose. It is made up of two component amylase and amylopectin amylase is a linear structure consisting of several glucose resides joined only by \[\alpha \], 1-4 glycosidic bonds (contain 200-1000 resides) while amylopectin is straight outer chain with short chain of glucose unit (25-35) linked by \[\alpha \]-1,4  glycosidic linkages.
