     Gluten refers to the protein mainly found in wheat endosperm (a type of tissue produced in seeds that ground to make flour). Gluten is responsible for both providing  nourishment to plant embryo during germination and affecting the elasticity of the dough (which in turn affects the chewiness of baked wheat products). Gluten (composed of 70-75% of protein) is actually composed of two different proteins, i.e., gliadin (a protamin protein) and glutenin (a glutelin protein). Soyabean contain  soya protein, spinach and potatoes contains very less amount of protein.
