    Answer:

                    When a drop of water falls on a very hot iron, it gets insulated from the iron by a layer of poor conducting water vapour. As the heat is conducted very slowly through this layer, it takes quite long for the drop to evaporate. But if the drop of water falls on iron which is not very hot, then it comes in direct contact with iron and evaporates immediately.
