    Ethylene (H2C = CH2) is only a gaseous plant hormone. It plays the key role in controlling the fruit ripening, falling off of leaves, flowers and fruits from plants. During fruits ripening, the process of respiration in fruits is hasten by ethylene, at this phase, complex carbohydrates are broken down into simple sugars, cell wall becomes soft and the volatile compounds associated with flavor and scent in the ripe fruits are produced.
