Chymotrypsin is produced by pancreas, which is a mixed gland. It also secretes hormones. The enzyme is secreted as an inactive precursor, chymotrypsinogen, which is activated by another pancreatic protease trypsin. It works between pH of 7.5 - 8.5 and acts on casein and protein producing calcium paracaseinate and large peptides. Liver does not secrete any enzyme.
