    Bile salts bring about emulsification of fats in food so that fat digestion becomes easy and increases the surface area of fat droplets for lipase reaction. Pancreatic lipase is the principal enzyme for digestion of fat. It converts emulsified fat into fatty acid and glycerides. The enzymes proteases catalyse the hydrolytic cleavage of peptide bonds.
