Which enzyme converts glucose into alcohol?

    A)  Zymase

    B)  Diastase

    C)   Invertase

    D)  Lipase

    Correct Answer: A

    Solution :

Glucose and fructose are both converted to ethanol and carbon dioxide in presence of zymase enzyme. \[\underset{\begin{smallmatrix}  Glu\cos e\,or\, \\  fructose \end{smallmatrix}}{\mathop{{{C}_{6}}{{H}_{12}}{{O}_{6}}}}\,\xrightarrow[{}]{Zymase}2\underset{Ethanol}{\mathop{{{C}_{2}}{{H}_{5}}OH}}\,+2C{{O}_{2}}\]                 Invertase enzyme converts sugar into glucose and fructose.     \[\underset{Sugar}{\mathop{{{C}_{12}}{{H}_{22}}{{O}_{11}}}}\,+{{H}_{2}}O\xrightarrow[{}]{Invertase}\underset{Glu\cos e}{\mathop{{{C}_{6}}{{H}_{12}}{{O}_{6}}}}\,+\underset{Fructose}{\mathop{{{C}_{6}}{{H}_{12}}{{O}_{6}}}}\,\] Gastric juice contains weak gastric lipase, which converts some fats into monoglycerides and fatty acids. Bile salts of the bile break down fat droplets into many small ones by reducing the surface tension of fat droplets. This procress is called emulsification. This increases lipase action on fat. Lipase is present in the pancreatic juice and intestinal juice. Pancreatic lipase is the principal enzyme for the digestion of fat.                    \[\underset{(triglyceride)}{\mathop{Fat}}\,\xrightarrow[{}]{Bile}\]Emulsified fat                 Emulsified\[\xrightarrow[lipase]{Pancreatic}\]Fatty acid + Diglyceride                 Diglyceride\[\xrightarrow[lipase]{Pancreatic}\]Fatty acid + Monoglyceride                 Monoglyceride \[\xrightarrow[lipase]{Pancreatic}\]Fatty acid + Glycerol.
