    The mature rice grain is caryopsis. Rice invested in the hull is called rough rice or paddy while with the hull removed is known as brown, husked or cleaned rice. The grain coat is often pigmented and is differentiated into epicarp, mesocarp, cross cells, tube cells and spermoderm or integument. The endosperm consists of a single aleurone layer of polygonal cells with a central mass of thin-walled parenchymatous tissue containing mostly starch. The pericarp, nucellus, aleurone layer and embryo collectively constitute the bran, which is rich in oils, proteins, mineral salts and vitamins.
